# Mucus-Forming vs Mucus-Free Foods

## What it is

This is the practical heart of the [[mucusless-diet|Mucusless Diet]]: a
classification of *every* food into two camps —

- **Mucus-forming** (also called pus-forming or acid-forming) — foods the body
  supposedly can't fully use, which leave sticky waste behind. **Avoid or
  transition away from these.**
- **Mucus-free** (also called mucusless or acid-binding) — foods that digest
  cleanly and help sweep waste out. **These are the goal.**

Ehret's rule of thumb is blunt: *all* fruits and green-leaf vegetables are
mucus-free; *everything else* in the modern diet is, to some degree,
mucus-forming.

## The lists (as given by Spira)

Professor Spira rewrote Ehret's food tables for modern readers. A condensed
version:

### Mucus-forming (avoid / transition away from)

- **Flesh foods (pus-forming):** all meat, poultry, fish, shellfish, eggs, lard.
- **Dairy (pus-forming):** milk, cheese, butter, cream, yogurt, kefir — all
  kinds.
- **Cereals & grains (moderately mucus-forming):** wheat, rice, oats, corn,
  bread, pasta — white flour is called the worst ("makes the best paste").
- **Beans & legumes (moderately mucus-forming):** all beans, lentils, peas,
  peanuts, soy.
- **Nuts & seeds (mildly mucus-forming):** all nuts and seeds.
- **Fats & oils (mildly mucus-forming):** *all* oils, even vegetable ones.
- **Processed, fried, and sugary foods, alcohol, coffee, soda, vinegar,
  fermented foods, table salt and most spices** — listed as stimulants and/or
  acid-formers.
- **Starchy or fatty fruits/vegetables (slightly mucus-forming):** potatoes,
  avocado, unripe banana, cauliflower, corn, olives, raw carrots, squashes.

### Mucus-free (the goal)

- **Green-leaf vegetables:** lettuce, spinach, kale, collard, chard, arugula,
  watercress, leafy herbs, etc.
- **Starchless raw vegetables:** celery, cucumber, tomato, broccoli, asparagus,
  onions, peppers, radish, beets, zucchini, etc. (raw or lightly cooked).
- **Ripe fruits:** apples, berries, cherries, grapes, citrus, melons, peaches,
  pears, mango, pineapple, etc.
- **Dried/baked fruits:** dates, figs, raisins, prunes, etc. (gentler — used to
  *slow* cleansing).
- **100% fruit jellies, real maple syrup, honey, coconut water.**

## Two ideas that surprise newcomers

1. **"Deceptive" mucus-formers.** Some foods people assume are healthy are flagged
   as problems: rice (great glue, bad food), avocados (fatty and "addictive"),
   nuts, tofu, corn, beans, and unripe fruit. They aren't forbidden during the
   [[transition-diet|transition]], but they're not the goal.
2. **Cooking can change a food's category.** A starchy vegetable that's
   mucus-forming raw can become "relatively mucusless" when baked, because Ehret
   believed baking converts starch toward grape sugar. So *how* you prepare a
   food matters as much as *which* food it is.

## How to read these lists

Spira is emphatic on one point: **this is not a menu of "what to eat tonight."**
It's an objective ranking of foods by mucus content. Some technically mucus-free
foods he doesn't actually recommend, and some mildly mucus-forming foods are
useful *tools* during transition. The lists tell you the *direction* to move, not
a meal plan. The actual day-to-day method is the [[transition-diet|Transition Diet]].

## Where the sources agree and differ

- **Agreement:** Ehret and Spira agree on the two-camp principle and on which
  whole categories (meat, dairy, grains, starches, fats) are the main culprits.
- **The biggest disagreement in the whole tradition lives here:** Ehret's
  *original* food chart borrowed a table from the chemist **Ragnar Berg**, and
  Spira openly says that table is "problematic and quite confusing" — that several
  foods Berg (and Ehret's reprint) labeled harmless are actually mucus-forming.
  Spira took the "editorial liberty" of **replacing the table entirely** with his
  own. He frames this as one of the few places where Ehret's writing "does not
  stand the test of time," because Ehret was trying to argue with the science of

- **Reality check.** Modern nutrition does not use a "mucus-forming" category and
  considers many items on the avoid list (legumes, whole grains, nuts, vegetable
  fats, fish) to be nutritious. Use these lists to understand the *sources'
  worldview*, not as dietary guidance.
